How to Store Dried Seafood in Malaysia

Three storage stages to remember

Malaysia's warm, humid weather makes moisture control important for dried seafood. Start with the conditions printed on your pack, then distinguish between unopened, opened and soaked ingredients. Keep the original name, dates and handling instructions with the food.

Stage What to do
Unopened Check that the seal is intact. Use the storage conditions stated on the pack from the day it arrives, including refrigeration or freezing when specified.
Opened Use clean, dry utensils. Reseal well or transfer to a clean, airtight food container, keeping the label and opening date.
Soaked Keep separate from dry stock. Use a covered food container, refrigerate longer soaking as directed, and plan to cook promptly.

Two examples from our range

  • Dalian dried scallops, 100g: the current listing calls for refrigeration or freezing after receipt. Arrange cold-storage space before the pack arrives.
  • Mei Hua Baked Fo Shou Fish Maw: the current listing advises cool, dry storage and tight resealing with refrigeration after opening.

These examples apply to the named products. Check the directions for the exact pack and option you buy.

Keep heat and moisture away

For products labelled for cool, dry storage, choose a place away from the cooker, sink and direct sunlight. An airtight container helps protect food from moisture; it does not replace a stated cold-storage requirement.

For food requiring cold storage, keep the refrigerator at 4°C or below and the freezer at -18°C or below. Leave room for cold air to circulate and keep food covered.

Make opened packs easier to manage

Take out only what the recipe needs, then close the remaining pack. If you portion ingredients into containers, retain the original label with each batch. Use older stock first; finish the old batch and clean the container before adding a new one.

After soaking, plan the next step

Once seafood has absorbed water, its storage needs have changed. Prepare only the amount you intend to cook. For longer soaking, use refrigeration as required by the product method rather than leaving it on a warm kitchen counter.

Cook promptly, or follow the specific product's refrigerated or frozen storage and thawing directions. Never return soaked seafood to the dry pack.

Dates and condition both matter

There is no single shelf life for every dried seafood. Use the pack's date, storage and after-opening guidance instead of a general number of months.

Discard mouldy food; washing, scraping or cooking is not a way to rescue it. Stop using products with insects, clear spoilage or an unusual smell. A normal smell alone does not prove safe storage.
